Summer days are perfect for cool beverages and refreshing drinks. A couple of days ago, I went to the supermarket and grabbed a tray of pre-cut watermelon, and I just wanted to make a refreshing watermelon mocktail I could enjoy with my friends who are coming over this afternoon.
Crafted drinks at home are such a special way to treat your guests. When you take the time to prepare recipes, of drinks, snacks and even better, full meals, your guests feel special. It shows you care about them and that you spent some time preparing ingredients and getting ready for their arrival.
I am also taking the challenge to develop non-alcoholic beverages for me to enjoy a healthier version of drinks… Even the word Mocktail, which I learned recently and find it so funny to say, is perfect for these delicious fruity drinks. Summertime is so awesome to get creative! Summer seasonal fruits are so delicious and sweet… you will only need ripe fruit and lots of lime to mix with water, soda or carbonated water.
This watermelon refresher recipe is very easy and part of the #BelinasHappyHour. You only need 2 ingredients to make it. Ripe watermelon and the juice of 1/2 lime. If you want a sweeter version of it, you can add agave or simple syrup, but if your watermelon is sweet, no extra sweetener is necessary.
What you need
1 cup of watermelon cut in chunks
1/2 lime, squeezed
A piece of watermelon for garnish
1 sprig of mint for garnish
Add the chunks of watermelon into the blender, along with the squeezed lime juice. Blend for about 30 seconds, until smooth. Pour over ice and top with the sprig of mint. For an extra pop, make a small cut on a piece of watermelon, and add it to the rim of the glass. And enjoy your watermelon refresher!
For those wanting a boozed version, add an ounce of rum for an extra kick.
